Crab Boils at Headwaters Usher in Dungeness Crab Season
Three Wednesdays of Crab, Rosé and Beignets
James Beard Award-winning Chef Vitaly Paley and Headwaters Executive Chef Tim Eckard will host three Dungeness crab feasts at Headwaters, Chef Paley’s seafood-forward restaurant in downtown Portland, in late February and early March.
The crab boils on Wednesday, February 28, Wednesday, March 7 and Wednesday, March 14, from 6:30 pm to 9:30 pm, coincide with Oregon Dungeness crab season, which opened on January 15. Chefs Paley and Eckard work closely with coastal fishermen to secure a fresh supply of local Dungeness crab for Headwaters.
The three-course menu is $60 per person and begins with a Smoked Crab Broth with scallions and white miso. Wooden mallets will accompany the second, all-you-can-eat course, which includes whole Dungeness crabs, sweet corn, potatoes, drawn butter, charred lemon, Parker House rolls and sea salt. To finish, Headwaters Pastry Chef Megan Jeans offers Ricotta Beignets with cinnamon sugar and local honey.
Glasses of rosé wine and bottles of Miller High Life are included in the ticket price, with additional beverages available for purchase. Tickets to the event are limited and available via Feastly. More details can be found below:
